Starting a Paleo diet seemed a luxury working full-time and being a mom of a lovely, but very active 2-year old. I leave at 7am and get home at 7pm. Cooking has to happen while my son is eating his dinner, and/or bath/bed time if my husband is not working during the nights. Time is extremely tight and I grocery shop once a week. Organization is key to making our meals work and it can be done. Eating healthy is a reality, it is doable, and most importantly if I can do it...anyone can. Enough excuses. I am documenting this journey for myself and as a reminder of how important this is not only for me, but for my family.

I am no expert in nutrition or cooking. I am just a working mom ready to take control of my life once and for all. This is my journal of starting a Paleo lifestyle. I am not trying to impress anyone with my organized cupboards, perfectly crafted table, or flare for being a good hostess. This is just me finding the new me. Not even new - maybe just a lighter and happier me.
