Baked Cabbage and Beef Casserole



This dish is easy and when doubled can give you a great freezer dinner to easily heat up when time is short. I never, and I mean never, ate cabbage before starting Paleo. Now, I love it. It is a really versatile vegetable and a good healthy filler. This recipe is from Paleo Leap, a real life saver for me when it comes to understanding and starting this Paleo Journey.

I do suggest combining red and green cabbage if you can to give a little more color to the recipe. It's not the most beautiful recipe in the world but a real "work-horse" to get dinner done and have it taste great. Sorry abut the picture, this was taken at night and doesn't give the dish justice.
