Turkey Kielbasa, Pepper, Onion and Potato Hash

Total winner! This turkey kielbasa dish is oh so yummie and I doubled the recipe so that the hubby and I could have leftovers to bring to the office for lunch. I tried to make the potatoes in my cast iron skillet, but since I doubled the recipe they just wouldn't brown up so I switched them to a rimmed pan in the oven at 425 degrees. I wish I had more patience to let them crisp up a bit more, but it was a rough night getting my son to sleep and I took these pictures at 9:30 when we finally got to eat.
