Before I even talk about how delicious this roast was, the thing that really got me was that I had never cooked one this way before. It was a "duh, I should have thought of that!" moment. Clever, clever Popular Paleo to cook the roast on the oven rack and put a rimmed sheet below. Does everyone do this and I am just catching up? I can't stand it when the meat has been sitting in the juices and gets all slimy. This method also made the dry rub crisp up beautifully on all sides. Yum yum.
